Organizing (or nesting?) - Part 1
In the past month or so I've been all about the organizing.(maybe that's why I haven't been here!?) I'm thinking that it might be the whole nesting thing kicking in.
Well, one of the big things I've been doing, that has helped out a ton with mid-afternoon stress, is menu planning. I never thought I would be one of 'those' people...and honestly, I never thought I could actually think ahead that far. BUT, now that I've started, it's been so easy.
Since I put in our organic produce co-op order on Monday mornings it gives me extra motivation to take the list and do the menu right away.
AND...I'm hoping now that I am going to post my menu here...it might keep me organized enough to continue.
So here goes(a week of Vegetarian/Gluten-free meals)...
Monday - Baked Potatoes and Bean Balls (from Vegetarian Mother's Cookbook) with Green Beans
Tuesday - Crockpot Pinto Beans (also from the Vegetarian Mother's Cookbook)and anything scrounge-able. Tuesday is co-op day so I do crock pot meals and hubby usually just grabs it when he's hungry.
Wednesday - Cheesy Broccoli and Rice Bake
Thursday - Deluxe Spinach Salads with Jicama-Orange Salad
Friday - Zucchini Soup with toasted tomato, cheese and basil sandwiches
Saturday - Leftovers
Sunday - Leftovers or whatever got skipped during the week

Spinach
Grapes, Seedless, Black
Oranges, Amber Sweet
Apples, Golden Delicious
Limes
So not the most exciting post, but more of a 'to keep me accountable' post!! Encourage me, tell me you think this is interesting...it will help my self-esteem! :)
