Well, I have to say that right now I'm in the midst of a cooking binge! The babe is sleeping and I have just loaded up the compost bin with all my scraps and wiped down the counter. So it's time to recap as the yummies bake, chill and freeze.
On the recipe card today was guacamole, roasted beets, more roasted veggies, a little Quorn Turk'y Roast and a raw Tropical Lime pie to bring it all together. Can you say super yum? As I was preparing all this goodness, I really started thinking about all the true goodness that has brought these fruits and veggies to us. Some of the goods came from the co-op, which is blossoming beautifully and has become a great community in itself. A few items came from the freezer stash that I'm just lucky to have, but I do think of others who don't even have a fridge to grab from. LASTLY, and what really got me thinking, is that a bunch of the items came from the pure generosity of new and old friends. It makes me feel so good that because of all these events I can cook up this friendly feast even though I have a grocery list that is way overdue and a mile long!! Grateful I say grateful.
And since I'd like to dwell on it a little more....
Here's a quick peek at the organic co-op bin for the week.(bananas, red leaf butter lettuce, plums, green peppers, onions, kiwi, roma tomatoes, nectarines, beets, strawberries, and spinach) This is were the beets, various veggies for the roasting and tomatoes for the guac came from. Unfortunately, these aren't all local, but that's the price we pay to get organics that are out of season for us. But, it's organic so at least it's one step in the right direction and in season we're hoping to add more local items.
Then there was all the local goodness. Limes from Danielle for the pie. Then there's this monster avocado also for the pie. Yes avocado for the pie...it's amazing what a raw food chef can mix up to make something so tasty. I noticed too that on standby are a few mangos I stumbled upon when Dex had to go see Danielle's neighbor's dogs the other day. What a great neighbor, she promptly offered up mangos, even without knowing us (I think she thought I was Danielle for a bit)! AND lastly...there is one of OUR pineapples and it can't be left out. It's beginning came from the little smoothie shop we get veggie waste from for our worms and compost.
OH...the love of friends and the full bellies of feasting! I guess you can just say we're fat and happy tonight! Since I've been talking about food so much lately...you probably are too! If you're lucky the next post may be back to crafting...eco-living in the tropics ...or cute babes...or something else non-food related...but I only said MAYBE!!!
